Ingredients

Marinade

Put all the above seasoning on the chicken and marinade overnight.

Cooking Method

Pre-heat oven to 200 or gas mark 5.

Roast in oven for 1 hour or until desired colour is achieved.

Add a bit of marinade if chicken gets dry during cooking.

Jerk Sauce.

Simmer the rest of marinade until onions are cooked. Chop chicken into small pieces. Puree marinade mixture and drizzle over chicken.

Enjoy with your favourite bread, savoury rice, rice & peas, Yorkshire pudding, fried dumplings or festival.
