Method
Season meat except onions and leave to marinade overnight.
Saute onion without colour.
Add meat to onions and incorporate until seared.
Make stock and add to mixture.
Stir and bring to the boil.
Reduce heat to medium.
Cover and cook for 1 hour. Taste and correct seasoning to taste and simmer for another ½ hour or until tender.
